How many ways can you find to use pumpkin puree? Well I just came up with my recipe for a healthy Pumpkin Smoothie, so there’s one more to add to my list. Fall is definitely the season for pumpkin everything. These plump winter squashes have become quite the popular flavor in baked goods, hot coffees, and smoothies. In addition to all this pumpkin goodness, I found out that it is Smoothie Week at Williams-Sonoma. Who doesn’t drool over all the cool stuff you can find there! The Blender sure would be a great way to make smoothies of any variety. (psst, there’s a special going on NOW!)
How to Make a Healthy Pumpkin Smoothie !
But really, who needs lots of extra sugar and added fat right before the big eating holiday season? My Healthy Pumpkin Smoothie recipe contains no added sugar or fat, and is packed with great nutrition. The next time you have some left over pumpkin puree from making a pie or quick bread, save it for your next smoothie.
Here’s how my smoothie came together.
The ingredients included,
1/2 cup of vanilla yogurt
1 cup of pumpkin puree
1/2 cup diced apples
1 cup of ice
1 teaspoon pumpkin pie spice (or substitute the Essential Oil Pumpkin Pie Blend – recipe below)
Combine the ingredients in the heavy duty blender or smoothie maker. Blend until mixed thoroughly. Taste and adjust for your taste. Really, anything can be added at this point depending on your taste. Add a small handful of berries, or the other half of the banana, if desired.
If you want it to be more decadent, add a scoop of vanilla ice cream! But we were talking about healthy here weren’t we?
Poor into a tall glass, sprinkle a dash of nutmeg and a small amount of chocolate garnish, grab a straw and enjoy!
If you prefer, you can make a pumpkin pie spice alternative using your essential oils. I was inspired by my good friend Kat who gave me this formula for the spice blend. If you are interested in learning more visit Simply Living Simply.
